There is not a person I've made this for, that doesn't like it! This recipe is the perfect healthy side - lots of wholesome ingredients, plenty of fiber, a touch of the healthy fats, and even some protein makes this colorful side dish both nutritious and delicious! A hit at your family cookout and mine!
Ingredients:
Dressing
- 1/4c Balsamic Vinegar
- 2 TBSP Extra Virgin Olive Oil
- 1/2 tsp sea salt
- 1/2 tsp sugar
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
Salad
- 1 15 oz can black beans, rinsed and drained
- 1 15 oz can sweet corn, drained
- 1 15 oz can white corn, drained
- 1/4-1/2 cup fresh cilantro, chopped (more or less to taste)
- 1 red pepper, chopped
- 1 jalapeno pepper, chopped
- 1 red onion, chopped
- 2 firm but ripe avocados, cut into 1/4" - 1/2" cubes
Directions
- Mix dressing ingredients together in a small bowl
- In large bowl, stir together black beans, corn, onion, avocado, red and jalapeno peppers
- Toss with dressing and mix in cilantro
- Cover and refrigerate overnight
